Hot days call for cold treats! These peaches and cream kefir popsicles are the treats I’ve been dreaming of. They are made with fresh peaches, coconut kefir, and sweetened a little to taste with green leaf stevia.

If you are like me and have trouble finding desserts that fit your lifestyle, I’d check these out. They are gluten-free, refined sugar-free, and dairy-free. The only sugar comes from the peaches. The creaminess comes from the coconut kefir.

Currently, in California, we are entering a little bit of a heatwave. Our autumn weather is a bit delayed. September is the beginning of a dry, and hot period. Having a cool treat like these popsicles gives you a much-needed break from the heat. Even if you are in an area that isn’t too hot, these are still a good treat. The peaches add a nice end-of-summer flavor note!

Coconut Kefir is Magic!

If you’ve been following along this summer, I’ve been on a major coconut kefir kick. It’s so easy to make and can be used in a variety of delicious recipes. If you are intimidated to ferment and make this yourself, don’t worry, I made a simple guide for you. You just need some coconut milk, Body Ecology Kefir starter and some Body Ecology Ecobloom.

This kefir is what adds the “creaminess” to these popsicles. However, once you have your kefir, you can make so many delicious recipes (like the Strawberry Coconut Kefir Smoothie).

Add Some Stunning Edible Flowers

I absolutely love adding edible flowers. They have a nice subtle taste, but are rich in beauty and add a level of class to the recipe. While you don’t have to add these flowers, I believe they take this recipe to the next level. The vibrant orange of the Calendula flowers pleasantly pairs with the peaches resulting in a beautiful treat.

Modifications

If you don’t follow a dairy-free lifestyle, then feel free to use a dairy-based kefir instead of coconut based. I personally love the subtle coconut flavor that gets added with the coconut kefir, but use whatever kefir you enjoy most!

I also sweetened these with stevia. Coconut sugar and maple syrup are also good alternatives if you do not follow a sugar free lifestyle.

Peaches and Cream Kefir Popsicles

Peaches and Cream Kefir Popsicles

Yield: 6 Popsicles
Prep Time: 5 minutes
Cook Time: 5 minutes
Total Time: 10 minutes

At the end of summer when peaches are perfectly ripe, these peaches and cream kefir popsicles are the ultimate treat!

Ingredients

Instructions

  1. Place all ingredients in a powerful blender except for the coconut oil.
  2. Blend for 30 seconds to a minute or until the mixture is blended to a drinkable consistency.
  3. Slowly pour the coconut oil into the blender while blending on low. This will help the popsicles to emulsify nicely.
  4. Pour into popsicle molds
  5. Freeze popsicle molds until solid
  6. Take out and enjoy it!
