This Keto Rhubarb Strawberry Ginger Smoothie (vegan and paleo as well), is a wonderful late spring/summertime treat! It’s filled to the brim with antioxidants, nutrition, and vibrant delicious flavor.
Being from the Midwest, I was surrounded by rhubarb. It seemed like anyone who had a garden had a little plot of rhubarb. Typically, people would make pies or crumbles for dessert, but I need to be honest. Even though I saw tons of rhubarb, I never tried it! I know, crazy right? Don’t ask my why, but I figured it was never too late to give it a try!
Rhubarb Smoothie Inspiration
What inspired this recipe was my Imperfect Produce box. Rhubarb was an option to choose, so I thought why not give it a try? You know, even since I’ve grown up around it. This is one of the many reasons I love Imperfect Produce. It’s super easy to select and choose gorgeous seasonal ingredients that might not be available at the local farmers market or grocery store. I just had to give it a try!
Let me tell you, it was AMAZINGGG! It was the perfect hint of tart. Mixed with strawberries, the sweetness was balanced out perfectly making an absolutely incredible smoothie! Add a little ginger and you get a nice little kick of spice with some added nutritional benefits.

Benefits of Rhubarb
There are so many amazing benefits besides an amazing tart taste! I’ll touch on a few of them.
First, it is extremely easy to digest. Since it’s packed with fiber, it is extremely beneficial for the digestive system. Some research has even found that it can help protect the intestinal wall “through increased secretion of gastrointestinal hormones” (https://draxe.com/nutrition/rhubarb/)
Second, rhubarb packs in a lot of Vitamin K which can help prevent osteoporosis. Vitamin K is important because it helps ensure continuous support of the bones and has a positive effect on mineral density.

Finally, there is some research studying on how rhubarb can stave off brain disorders which is absolutely fascinating! It truly is a magical and delicious ingredient that I’m sure you will enjoy!
Summertime is Smoothie Time
I try my hardest to not only eat local but also eat seasonally. This keto rhubarb smoothie is the perfect recipe for anyone trying to live this lifestyle. Rhubarb is freshest during the summer and a cool smoothie is oh so relaxing in the heat of summer time!
I also paired this smoothie with my other favorite summertime fruit, strawberries. Together the tartness of the rhubarb and the sweetness of the strawberries combine and balance each other out to make a harmonious smoothie. The ginger adds an amazing kick of spice!

- 2 stalks of rhubarb
- 2 cups of frozen strawberries
- 1-2 inches of peeled and chopped ginger
- 2 cups of almond or coconut milk
- 4 tablespoons of flax seeds or chia seeds
- 2 tablespoons of coconut butter or coconut oil
