superfood cacao turtle brittle
- 1/2 Cup coconut oil
- 1/2 Cup cacao powder
- 1/2 Cup cacao butter
- 1 Cup Lakanto Raw Monk Fruit Sweetner
- 3-6 drops Lakanto Liquid Sweetener Drops
- 1 Tablespoon Spirulina or Moon Delli’s Blue-Green Protein Powder
- 12 Ounces pitted medjool dates
- 1 Tablespoon coconut oil
- 1/2 Cup water
- 1 Tablespoon organic ghee
- 1 Pinch pink sea salt
- 16 (Ounce) oz Pecans
- Make caramel.
Places all caramel date ingredients into your food processor and blend until smooth. If your mix is super dense keep adding splashes of water.
- Make Chocolate.
Add all of your chocolate ingredients to your food processor or double broiler – I used my double broiler. The raw monk fruit will take some time to whisk. Whisk until fully melted and smooth.
- Start building your turtles.
Layer down the chocolate first into circles – or the best circles you can get. (Doesn’t have to be perfect).
- Add Pecans.
Add the pecans as your second base. Think of them being the arms and body of your turtles. 🙂
- Add the caramel.
Time to add your caramel – this is one of my favorite steps as it really starts to look like a turtle now. 🙂
- Pour it up.
Time to pour on the chocolate over the caramel for the top coating, & last but not least if you would like to add on the grand superfood finale – POUR on the blue-green spirulina powder.
Place in the freezer to set for about 30-60 minutes. Store in the freezer for up to 2-3 months if they can last that long.
