Do you have your favorite treats from childhood that just come up in your daydreams? well, this past weekend here I was in kundalini yoga (supposed to be meditating here) and all of a sudden I started to think about Hershey’s COOKIES & CREAM bars that we grew up with. And of course, here we are …I HAD to make them my own sugar-free version for you.
Sugar-Free Cookies & Cream White Chocolate Craving daydreams
I’m so excited to tell you that after a few rounds of testing these are the REAL deal! With the mixture of Raw Monk Fruit for a sweetener and the stevia drops in vanilla creme! (the best combo). The best part is you have the same crunch (cacao nibs) as your childhood memories without all the other feels that a Hershey’s bar will leave you with.
These cookies & cream bars are to die for and like the other chocolate bars so easy to make. Please do yourself a favor and make this. If you are on Body Ecology or a sugar-free lifestyle these are definitely friendly for you as long as you can tolerate chocolate. (for some we have to take a break from chocolate due to the caffeine in raw cacao) I know I did. You can also try to do cocoa versus raw cacao nibs if this is the case. Either way, just listen to your body at this time.

-Store them in the freezer or fridge for up to 2-3 months in a zip-lock or glass container.
-Make sure to fully whisk the raw monk fruit into the mix and bars otherwise it will sink to the bottom of the bowl.
– If you need/want more sweetness just add more raw monk fruit to taste.
– Be careful while if you want to add more stevia – adding too much stevia will leave the bars with a bitter taste.
– Make sure you are familiar with your brand of stevia – I prefer a non-alcoholic brand and one that I have tried before most brands can be very very bitter – my favorite brand is listed below in the ingredients list.
– I used this mold from Amazon for my chocolate.
-optional adaptogen powder of choice for these is Ashwagandha from Sunpotion. (Ashwagandha is super powerful with combatting stress and a strong immune system aka perfect for the holidays!)

- food processor
- double broiler
- ground your cocoa/cacao nibs
ground your nibs 😀 either in a food processor or with a mortar and pestle
- melt ingredients
place all of your ingredients into your double broiler or a pyrex bowl over a small pot of boiling water.
- pour it up
pour all ingredients into your chocolate molds and freezer for 1-2 hours or over night. & that’s it you are all done! enjoy! xoxo
