Mini chocolate chip paleo cookies made with cassava and ghee!
I’ve been craving a warm buttery chocolate chip cookie and happens to be paleo. I’ve also been obsessed with ghee as of lately and to my surprise ghee and chocolate happen to be the BEST match. I hope you try them! You can make them mini or a regular cookie size OR a huge cookie. Just make more batches if needed. Let me tell you though they don’t last very long. My boyfriend literally ate them ALL for breakfast the next day. ;0
- 1 bar paleo chocolate (I used eating evolved)
- 3/4 Cups cassava flour (I used otto’s cassava flour)
- 1/2 Cup organic honey
- 1/3 Cup ghee (i used fourth and heart)
- 1 Pinch pink sea salt
- 1 Teaspoon baking soda
- preheat oven to 350 degrees
preheat your oven to 350 degrees while you make the cookie dough
- mix ingredients & roll.
First put all dry ingredients into a bowl and mix. Second add in the wet ingredients you do not need a kitchenaid but they are really fun. 🙂
mix until fully combined.
I like mini cookies and if you do too take about 1 or 2 tablespoons of dough and place on cookie sheet – I prefer to put parchment paper down that but is also optional.
- place into oven & bake
place in the oven for about 11-12 minutes – i enjoy them while they are still all gooey on the inside. Now enjoy!
