cardamom & cinnamon amaranth porridge (vegan, gluten-free, & body ecology)
What You Will Need
- jar to soak seeds
- pot to boil
- 1 Cup Amaranth
- 2 Cups almond or pumpkin seed milk
- 1/4 Cup Lakanto Golden Raw Monk Fruit (use MYTINYLAGUNA for 20% off)
- 1 Teaspoon cardamom
- 1 Teaspoon cinnamon
- 1 Tablespoon Pumpkin Seeds (optional for toppings)
- 1 Tablespoon white chia seeds (optional for toppings)
- soak your seeds.
soak your amaranth seeds overnight or up to 8 hours – drain & rise before cooking.
- boil to low.
heat up the milk until it begins to boil – whisk in the amaranth seeds and adjust the heat to low.
- let cook.
let your seeds cook for about 20-25 minutes than fold in the remaining ingredients. Feel free to top with fruit, sweetner, nuts or seeds. ENJOY!
